I used sambuka in the icing to give it an alcoholic flavour - which actually kept. I wasnt sure if the alcohol would evaporate and leave no taste.

Ideally I would have left the bottom part or made it bigger, but it had to feed a lot of people. In one of the pictures you can see the fondant has started falling off - the result of being left for hours in a hot kitchen. One of my first cakes
