For a University of Texas fan. Simple and yummy coconut/mango. I learned that it's really hard to smooth coconut frosting.
This cake was made for an 18 year old, who's mom wanted to surprise him with a rainbow cake. Not too many specifications for decorating, just flags, rifles, or swords...something related to color guard and the school colors (blue and orange). The important part was the rainbow though. My handwriting sucks, plus I didn't leave enough space for writing. But I'm happy overall with the hand-drawn flags and the cake itself.
This cake is for an Indian couple moving away, friends of my parents. The wife really likes strawberry cake, so it is with a white chocolate filling. I'm still working on a steady hand, but I'm getting better, compared to my previous henna attempt
This was supposed to look like hydrangeas. I think I got it too pink and it ended up looking like a cherry. Either way, I hope my mom likes it, I'm taking it down to her this weekend :)
Made a delicious green tea cake, but the chocolate filling or the tea browned up, so it doesn't look that green on the inside. Brush embroidery clovers and made up a technique for clovers using buttercream icing. And the yellow stuff was supposed to represent coins, or clover flowers. Anyway, DELICIOUS cake. And just for fun :) I like finding excuses to make cakes.
Rainbows and roses! I'm going to attempt the rainbow cake again. First time with roses (which I still need work on).
Red velvet cake with cream cheese icing. Still can't figure out how to make cream cheese icing smooth. Brush embroidery with hand done flowers, using leftover icing.
Birthday cake for my mother-in-law. Her birthday is 2 days before V-day, and as she was growing up, her mother would torture her with heart cakes every hear. We decided to reduce the torture for her birthday party :)
My mom turned 50 this year, paid her a visit with this cake. A couple of years ago, when my dad turned 50, I bought a store cake and stuck a gravestone candle. My parents are immigrants, and didn't understand the whole "over the hill" concept. My mom seemed a little upset initially at that time. So this time, I did a happy sun. I still wrote "Over the Hill" along the edges :) Vanilla cake with mango custard.
This was my final for the Wilton Fondant and Gum Paste course, which I have doubled as my Thanksgiving cake this year. Leaves, turkey, and pumpkin are handpainted, and it took a long time. I'm very happy with the resulting cake. The cake is chai flavored and everything is edible. Enjoy the photos!
Aptly named due to the fact I have a very out of place purple 'fantasy flower' made in the Wilton class that I stuck on top of my cake I took to work for our Thanksgiving potluck. People ate around the flower sadly...so I'm stuck with it again. Guess I have to throw it away.

I played with fondant before, but this is the first time I actually knew how to use it (compare to my Phantom cake). I wanted to do something fall, but it looks more like Christmas trees. I'm pretty happy with it though.
Final for Wilton Course III. I am very pleased. I need to know if there's a way to make buttercream icing made with chocolate to stop cracking so much. Otherwise, it was delicious. Royal icing easter lilies, fondant leaves, White/Spice cake with pumpkin filling and chocolate icing. AMAZINGLY DELICIOUS!
Wow, I did not realize how long it would take to do everything on this cake. Still trying to find a vegan recipe for royal icing that will keep the stiffness to make flowers. The cake is what I would call Mayan Cocoa Spice, and it's spicy.
This one took a while, first time using fondant. I'm still not sure how to mold fondant very well and keep it in place while drying. I'd appreciate tips. Otherwise, I'm pretty happy with how this came out. Also, it's too humid in TX, and everything melted rather quickly.
I saw a henna cake on DeviantArt that I was very impressed by. I don't really have henna skills, but I decided to find a design and sort of based my design on it. It's a lot harder than I thought, and I know how to possibly do better next time.
Took this one to work to show off some of my basic skills. This is a cake flavored with real rum and has a banana pudding filling, sort of like a banana foster's. As people cut it, they cut around the cow until that was all that was left...I don't understand why people do that, it needs to get eaten anyway.
