Chocolate Birthday
Not spectacular decorating but I am very pleased because other than the dots and writing, this cake is completely sugar-free and is also gluten free. No one could tell either. It was absolutely delicious and my son loved it. The chocolate icing is made with butter, cream, unsweetened baking chocolate, European cocoa, maltitol powder. and vanilla. The cake flour is substitued with a combination of rice flour, potatoe starch, tapioca starch, and xanthan gum. The batter is sweetened with xylitol.

Belated Easter Cakes
These are two separate 4-inch round mini cakes done to give away to friends for a belated Easter. My elderly mother was visiting from out of state and we decorated mini cakes together. She piped the white border on the one until her hands became too shakey. She used to decorate regularly when I was a child. This was truly a special occasion. I just love the joy decorating cakes bring! Chocolate cakes iced in buttercream. Small flowers are fondant.

Baby Bear Quilt
Fondant over BC. I made this for my daughter's baby shower (my first grand-baby). Covering the sides of a cake with fondant was a new experience and lots of fun. I had a little trouble with positioning the letters at 2 a.m. I learned that allowing them to dry a little before placing (and catching a little sleep) would have been easier. Lessons learned are always worthwhile! Anyhow, my daughter and guests loved the cake and didn't seem to notice.

First-Time Upside-Down Icing Technique
My daughter's birthday is tomorrow. A couple of weeks ago my husband expressed interest in learning to decorate a cake. I suggested that he decorate our daughter's birthday cake. I gave him a lesson on making rossettes and stars and he feels ready for the big day tomorrow. The small cake is a demo 4-inch I did for him. The larger cake, I prepared for him to decorate using the upside-down icing technique for the first time. Thank you Mr. Arnett for sharing this with us! It was fun and so easy!

Simple Rose Birthday
Yellow cake with butter frosting. I learned that it was my daughter's future mom-in-law's birthday and had just so-happened to bake a 6-inch round with left over batter from a previous cake the day before and didn't know what I'd do with it. We were having the future in-laws over for dinner that night. I had 30 minutes to decorate this cake before church. As always, I had a lot of fun in the mad rush. She loved the cake.
