Chocolate cake filled and iced with chocolate cream. Basketweave and border in chocolate buttercream. The truffles were super-easy and lots of fun to make - just baker's chocolate, peanut butter, and Cool Whip!
I had some extra icing and through I'd play around with some techniques. It's kind of funky, but made me realize how difficult it can be to make equally sized rosettes!
Boy did I mess up on this one! Somehow, the icing was too perhaps, the icing was filled with crumbs, so I had to make up for it by wrapping ribbon around the sides and sprinkling coconut on top. It was an unexpected cake for the birthday girl, so she was happy to have it and everyone seemed impressed anyhow. I hate how the flowers in the middle are off center. . . .
Mini Cheesecake with whipped cream topping and buttercream flowers & borders for DH's birthday. Easy to make and yummy to eat! Any ideas why I can't make roses anymore? Any input would be appreciated. Thanks!
This was another version of the previous lotus cake, made for Mom's 57th birthday. Applesauce Cake with Cream Cheese filling. Easily to do and much appreciated by Mom.
Wasn't this cake fun! I didn't realize how tall the pirouettes are (plus I was being lazy and dividing batter into two cakes), so I had to find a way to bring my fruits up higher. I layered bananas and chocolate Cool Whip, but in the end, it all came crashing down! I had to put it all back together somehow. Luckily it was for a friend who was so happy just to get a cake and loves chocolate and strawberries enough not to even notice the sloppiness!
This was inspired by Mopsy's much more beautiful cake. As you can see, I had a hard time with making dots. . . any suggestions or feedback are welcome. Thanks for looking!
Applesauce Cake with Cream Cheese Filling and Buttercream Icing. The yellow and orange flowers are gumpaste, rest buttercream with piping gel used for the water. The sides were done in basketweave with rope borders top and bottom. Finally I did something original!
This was the final cake for the Fondant & Gumpaste class. Lots of fun to make and EASY - despite the fact that we were using the wrong hankie pattern (that's why there are so many flowers to cover up the seams!).
This was a real improvisation - trying to use up whatever colored fondant I had left!
This cake began to give a little because of the heavy roses (as you can see from the basketweave), but it was good practice at fondant roses!
I had SUCH a hard time with fondant! I mixed too much Gumtex into it and it was so difficult to roll. Anyway, I was happy enough with it in the end and it became a great surprise birthday cake for a friend!
I did the class in two weeks instead of four just before leaving the country, so I didn't feel safe doing Fondant as I had a tough time with it. Stuck with BC.
Dessicated coconut with Cake Sparkles on the top & shredded coconut on the sides. Ice cream cone trees.
All my cakes & icings are eggless, so these were done in BC and dried for a few days. Any suggestions, aside from stepping out and being original?!

My favorite cake! I did the flowers with buttercream rather than RI since I don't do eggs.
