I made this cake for my niece/goddaughter's wedding to a man she met while teaching in Mexico. The wedding colors were red & white and the theme was based on a Mexican fiesta. They brought the topper with from Mexico. I first put a rosette border around the tiers, but decided it was too fussy and took away from the flowers, so I scraped it off (after everything was done!) and changed the border. So glad the underlying frosting had crusted well enough to allow me to make the change. Still a bit nerve wracking, though.

Festive Anniversary Cake
Had fun practicing ruffles (joining layers) and swirling rosettes on our 40th anniversary cake. Despite the fact that my grandson and I managed to damage it several times as people crowded into my tiny kitchen, it looked beautiful and tasted great. Made WASC layers with almond flavoring, butter rum flavoring, and Bailey's.

This is how I decorated my daughter's wedding cake in my hotel suite. Other than the joint between the layers, I had prepared ribbons to wrap to minimize my time. Just barely made it to the rehearsal as it was because temps were in the 80s with air conditioning so it took me most of the day just to frost it - in and out of the fridge to cool/set the frosting. Made the base and topper. Wedding theme was origami cranes, with colors of brown, ivory, and gold.

Under/over The Hill
Single 12", 10", 8" and 6" bowl layered to make the "hill", with support/cardboard under 8". Graham cracker crumbs created trail for my ATV representing my brother-in-law's 40th (going up hill yet) and black road for my husband's motorycle representing his 59th (over the hill). Used the spice cake extender recipe and people loved the taste. Not fancy as I was also preparing for my daughter's baby shower.

Sophisticated Wrapped Ribbon Wedding Cake
Tiers are separated by foam discs wrapped in ribbon & decorated w/crystals. Bottom & top separators are 2" high & rest are 1" high. All are 2" smaller diameter than cake below and 1" smaller than cake above. Bottom tier is Divine Amaretto cake with almond paste/frosting filling; next is WASC with Jam Filling (raspberry); rest are Triple Chocolate Fudge cake w/ganache & chopped maraschino cherries. Tons of compliments on taste & design.

I made this snowflake-themed cake for my daughter's 12/6/08 wedding. The snowflakes between layers are actually lighted from behind. I didn't have time to try new recipes so I used a Wilton buttercream frosting that I'd used for birthday cakes when the girls were small. I used Viva toweling to smooth it, then wrapped w/ 2 layers of ribbon. I baked, torted & crumb-coated each layer, then froze and transported 250 miles. Thawed & frosted the Friday morning before the wedding.
