Full-sheet cake featuring one side Coconut Cake with a Key Lime filling, and the other side a Red Velvet cake with Cheesecake Mousse filling..frosted with my French Buttercreme with fondant decorations.

Moulin Rouge Wedding Cake
This was done for a friend's daughter -they were having a Moulin Rouge themed wedding! Each cake was a different flavor (Red Velvet, Lemon/Rasp, Choc w/ peanut butter filling, and Yellow w/ choc mousse) and featured a different icon of the movie. Everything is edible! Instead of "Moulin Rouge", the letters on the bottom tier spell out the names of the bride and groom.

Raul's Groom's Cake
This Groom's cake was done for a Mexican groom that loved Salsa dancing. His bride requested his favorite cake: Peach Tres Leches. Thank goodness for the recipes here on CC! I had never heard of this, let alone made one! LOL The cake is frosted with my "Cheesecake Mousse" (cream cheese and whipped cream) and decorated with a Frozen Buttercream Transfer. Another first for me! Worked out ok. Sure wish I had known about this method YEARS ago! LOL Anyway, the Groom loved the cake!

Mexican Tiles
This cake was done for the wedding of my daughter's best friend, who was marrying a man originally from Mexico. They had found the inspiration for this cake on The Knot. They selected a tile pattern and then I recreated the tiles in fondant using their wedding colors of purple and lime green.

Minnie Mouse Cake
This cake was for my son's girlfriend on her 18th birthday- she (and her family) are HUGE Disney fans! After I realized I had sold my MM character pans, I decided to check out the galleries for ideas....well, there were about 15 pages of this design, so I figured I would simply add my version to the pile! LOL Thanks CC'ers! She LOVED it!

Nirvana Hearts
This cake was done for our 2011 State Cake Show. It is done in the Nirvana style with floodwork collars and panels. I took a class to learn Australian stringwork that weekend, so maybe for the ICES convention this summer I will add some stringwork on the inside edge of the top collar!

Snowflake Giftbox
This is the snowflake themed cake I did for my own 50th birthday party. My first attempt at the 'chilled fondant panels' method. Panels were cut, then placed in the freezer for a bit, then attached to the cake. Much easier to handle that way! Also did vanilla cupcakes with blue buttercream and chocolate cupcakes with peanut butter frosting. Each was accented with a little fondant snowflake.

Spiral Wedding Cake
This fall wedding cake was made for a friend. It was inspired by a cake he saw in one of my ICES newsletters, but now I can't recall which one so I can't give credit where credit is due. The cake was to be a total spiral, but mid-construction I decided to opt out and just do this modified topsy-turvy style. Cake is frosted with my French Buttercreme and features Red Velvet cake and some "tuxedo" cake (top layer WASC and bottom layer choc), both with my cheesecake mousse filling. The Bride and Groom loved it, so that is all that mattered.

Daisy Shower Cake
I don't do many cakes any more, but did this bridal shower cake for a co-worker recently. This was my first attempt at full-size gumpaste daisies (I've done little ones), and I loved them! My only irritation was that I only had a Choco-Pan/fondant mixture to do the wrap...and I HATE working with Choco-Pan! Oh well, the client loved it, and that is all that matters! The cake was Lemon torted with Raspberry and Raspberry Creme fillings. Yum!

Woodland Wedding Cake
This is my daughter's wedding cake! We found 2 photos here on CC and another from a wedding magazine that were inspiration for this 7 tier creation. It featured gumpaste ferns, oak leaves and acorns and the cutest little mushrooms! This was actually an all-styrofoam dummie display with a small section cut out for a piece of real cake for the cake cutting ceremony. I made double-layer sheet cakes for the caterer to serve.

Pumpkin Wedding Cake
This fondant-covered pumpkin tower was a re-creation of a tiered pumpkin cake that I THINK came from here on CC...let me know if it was yours so I can give you credit!! It was a lot of fun to make. Flavors were Applesauce Spice with Apple filling and French Buttercreme frosting, Pumpkin Spice with Pumpkin Mousse and Cream Cheese frosting.
