This was my first and last Gingerbread House. Christmas in Australia is far too hot to make these, the icing takes far too long to set and you can even see that the candy canes are melting!! But I still think it turned out pretty good.
This cake was a lot of fun to make. I did use a letter press for the writing - something I never use anymore. I have recently found the key to good writing is in the consistency of the icing, it needs to be runny enough to flow smoothly and just firm enough to hold shape.
I think that this was my first wedding cake. Both the bride and I were very happy with, but the 40min delivery drive up into the hills was quite harrowing!

Classical and sweet wedding cake. The lines on the sides is actually piped royal icing. First I indented the lines using the back of a knife to give me something to "lean in" and follow to ensure the lines came out straight.
