Chocolate Wedding Cake
My first wedding cake! This thing took a few years off my life. Top tier was Chocolate Coconut Rum Cake, filled and crumbcoated with chocolate coconut buttercream and covered with dark chocolate ganache. Second tier was Chocolate Fudge Cake, filled and covered with chocolate buttercream. Bottom tier was Chocolate Raspberry Chambord Cake filled with raspberry buttercream, crumb coated with chocolate buttercream, and covered with dark chocolate ganache. Wish I would have known the tablecloth wasn't white so I could have done something different on the board. Over all, I was happy (and relieved) with how it turned out. TFL!

Chinese Dragon Cake
This cake was for my brother's birthday (he loves dragons) so I wrote "Happy Birthday" in Chinese characters -I think! :) The cake was a chocolate fudge cake flavored with coconut and Malibu Rum filled with Chocolate buttercream, toasted chopped almonds, and chopped Almond Joys. I covered it in chocolate buttercream and Dark Chocolate Ganache. The Dragon is vanilla buttercream. It was fabulous!! TFL

Seminarian Cake
Italian cream cake with Cream Cheese Icing. Top was done as a FBCT. "May the Lord be With You" written around the face of the cake. This cake was made for our parish's seminarian who was leaving for seminary. Shell border on top was used to represent the shell priests use in baptism. The rope border used on the bottom is a reference to the cincture priests wear.

Pool Cake
Made this one for a 13 yr old's pool party. He wanted chocolated cake with strawberry filling and cream cheese icing Kind of specific for a 13yr old boy, I know. I used piping gel for the water. In the future, I'm going to try to make my own piping gel - the Wilton gel tastes kind of weird when you use more than just a tiny bit. I know it can be scraped off - I just don't like the idea of anyone having to scrape something off my cake because it doesn't taste good. I added the "DIVE IN" on the diving at the last minute. Diving board is a graham cracker covered with cream cheese icing. TFL!
