Coral & Seashells Cake
I made this cake in aprx 1 hour - not including baking time (I have never done anything this quick before). I wanted to make a little surprise for Mum. I had seen how to make the big lump of coral and wanted to try it out. You simply pour melted white chocolate (or candy melts) over ice that has been crushed in the food processor, then dump more ice on top. Leave in fridge 5 minutes and pull out. If you don't like the finished shape, you just melt more chocolate and add lump with more melted chocolate.

I made this cake for my little boys 2nd birthday. We had way too much cake to eat, but I enjoyed making it, he loves all farm animals and he came to see and said "I like it! - Kiss!" and promptly gave me a kiss, so I pleased the wee man I was aiming at. I got the idea for the structure of the cake, from a baby shower cake by CC member Karenelli

Christmas Ornament Cupcakes
I absolutely had to try these cupcakes - no cake pictures have ever inspired me with such ferocity to TRY to make them. I baked the cakes the morning of Dec 24th and decorated between 9-10pm that evening. Given how quickly I did them, I was pleased with the results. I would love to try them again, with more time to decorate. They are sitting in single Wilton cupcake boxes with tissue paper (lid open). I used the Wilton mini ball pan and a standard cupcake, with buttercream between.
