Topsy Turvy Cake For Mad Hatter Tea Party Birthday
Two tier, chocolate fudge pound cake with ganache filling, covered in Duff's black fondant and Choco-Pan tinted in other colors. I used Two 10" and an 8" cake for the bottom and two 6" and an 8" cake for the top tier. My first TT cake in a while, and it was fun. The birthday girl rolled the little balls circling each tier, and was thrilled that she got to "help" make her cake.

Snowflake Cookie Pops
NFSC recipe cut with large snowflake cutter from wilton, copper cutter. Baked with a stick, then covered with melted candy melts or equivalent white chocolate coating. Once the tops are cooled and firm, the snowflake pattern is piped on with more melted candy, then immediately doused with coarse sugar and allowed to set. Excess sugar is brushed off. They are really delish!

Steelers Helmet Cake
Done for a friend of mine, her husband was turning 49, hence the marking of the "yard line." Lemon pound cake for the helmet, 3-6" rounds were carved, covered in fondant and painted with black food coloring for the shiny black. Fondant accents with butter cream piped grass and lines and words. The facemask is wire covered with fondant.

Hospital Unit Meeting Sandcastle Waves Cake
Two tiers, chocolate/chocolate ganache and butter cake with apricot and hint of orange buttercream came together for this 10-14" square cake celebrating our unit meeting theme of "Catch the Wave, Get on Board" Molded white chocolate palm trees, shells and surfboard adorn the sandcastle, covered with a mix of graham cracker, vanilla wafer and dark brown sugar. The shape of the castle was dictated by the shape of the hospital building. Fondant waves painted with Wilton sparkle gel splash across the bottom tier, as well as buttercream icing, with writing in the same gel.

Baby Shower Duck Cookies In Fondant
Pairs of Duck cookies parade by in cello bags with Wilton printable tags and ribbon ties. NFSC with Toba Garrett's fondant overlays and Toba's Royal icing beaks and eyes. Each fondant cookies was paired with a yellow sanding sugar-covered duck behind it. Made for a baby shower of a friend.

Multiple Chocolate Groom's Cakes With Chocolate Covered Strawberries
The bride used individual groom's cakes for centerpieces for small tables at the reception. Each cake was almond with whipped ganache and raspberry filling. Cakes were iced in chocolate buttercream and tip #13 star scrolls and #10 round bead borders. Atop the cakes are clusters of chocolate covered strawberries.

Chocolate Covered Strawberry Wedding Cake
Three tiers, 6-10-14, icing in vanilla bean buttercream, piping done in ganache with #13 star tip and various round tips. Bottom borders #10 round. Cakes were almond cake with whipped ganache and raspberry filling, bottom tiers red velvet cake with cream cheese icing filling. Decoration devised with bride during consultation. I wasn't sure how it would look, but was happy with the results. Atop the cake are a bride and groom chocolate covered strawberry, and more strawberries adorn the tiers.

Strawberry Cake
My niece made a special request, a strawberry shortcake cake, but not the character. Three layers of genoise sponge cake filled with white choocolate mousse, made from instant pudding and cream, and sliced strawberries. Simple syrup on each layer of cake, topped with sliced and chocolate-dipped strawberries with chocolate sprinkles. The side and border were done with the same white chocolate mousse, and a large flower tip. Stars on the sides and simple reverse shells and shell borders.

Star Trek Cake
For my hubby, the Star Trek fan. Coloring book photo of USS Enterprise from the 'net, Star Trek font also from the net. Used a desktop publishing program to arrange the lettering and photo and printed it out reversed for FBCT. Took the colors from the uniforms of the original series. The rest just came along as I worked. Other than the top and message, I hadn't really planned this cake out ahead of time. Made the cake, from baking to finish in less than one day, in time for dinner!

Centerpiece Cakes
6" red velvet/cream cheese buttercream cakes. 18 done for the wedding in addition to the main cake, also in my gallery. Iced in ivory buttercream with wide satin ribbon border and scroll design on sides. Forgot my camera, had to take a cell phone photo. Cakes were place on bride's crystal-look cake plates. Florist still not there as I left, but cakes were to have red roses/petals on them per bride. Waiting for photographer photo.

Wedding Cake To Accompany Centerpiece Cakes
8 and 10" round cakes, amaretto/chocolate raspberry - red velvet/cream cheese buttercream. Ivory buttercream iced with black satin ribbon border and scroll design around side. Forgot my camera, had to use DH's cell phone. Got there before the florist even showed up. Red roses/petals were supposed to be added. Waiting for photo from photographer.

Teal Floral Scroll Wedding Cake
3 tier stacked cake, 6-10-14", red velvet/cream cheese and double chocolate/chocolate BC. BC iced and decorated with scrolls, flowers and leaves per a photo the bride brought in. The original cake had ganache icing which set off the teal better, IMO. Done for a friend from work.

San Diego Chargers Birthday Cake
1/4 sheet cookies and cream cake iced with buttercream and covered with fondant. Airbrush green and BC gridiron lines and numbers, BC grass border. Helmet carved from 3 stacked 6x2" round layers of lemon poundcake. 18 guage wire facemask covered with fondant. Fondant pennant with the birthday boys' name in BC and fondant helmet accents. Luster dust with vodka for metallic gold. Helmet carved taller than needed, in anticipation of "smushing" when the fondant was applied.

Baby Shower Cake
1/2 sheet butter almond cake with strawberry SMBC filling, iced in vanilla SMBC. Fondant covered and decorated. Blocks are squares of cake with fondant covering and accent. Baby bottle is molded from white chocolate. The bottle did not paint well with the color dust/vodka mixture. I had intended a pale green to match the cake. The hostess, the couple and the guests were amazed that this was all edible! And it was yummy, too!

Cake Stand Idea
While playing with my mini Castle Fairy Cakes, I stumbled on this idea for displaying mini cakes. I used a glass cake plate, then placed a champagne glass upside down in the center. The glass can be secured with wax, or floral tack. These cakes were about 3" or so in diamteter. For more cakes, I'd place this on top of another platter or plate, also glass and create another "tier" of cakes. I really liked it, so thought I'd share.

Mini Castle Fairy Cakes
Not baked for any particular reason, my girls enjoyed their fairy cakes, and I was surprised at how much I love the taste of fondant now that I use Toba's recipe! These cakes are about 3" in diameter, two layers of cake with white chocolate buttercream filling, top, and crumb coat. Covered in fondant, I used my new toy, the Wilton ejector set to make the flowers. And I discovered that my stringwork isn't as good as it used to be! One cake was done in white for possible use for an attendee of honor.

Taught My Mom To Make Cake Balls!
These are cake balls that I taught my mom to make. I usually throw the extra cake away because when I'm done doing a large cake, the last thing I want to do is make more! So I taught mom to make them and she was very pleased with them. This batch was almond cake with hazelnut creamer, covered in candy melts chocolate, which I had on hand, with ground up almonds in it. They were very good! She's already talked about her "next" batch. :)

Tropical Seashell Cake
Buttercream 3-tier stacked cake with piped beaded swirls on sides, beaded borders. Fresh flowers top and cascade over side of the cake, with white chocolate-pearl-dusted shell pops in the arrangement. Cinnamon sugar sand around base with white chocolate-pearl-dusted shells surrounding cake. The restaurant which held the reception had an amazing view of the ocean from 8 stories up.

Flower Cupcakes
Made these for our neighbor as a "thank you." Champagne cake with bavarian mousse filling, madagascar bourbon vanilla bean buttercream. Rather than ice the cupcakes and then put flowers on top, I piped the icing onto the filled cupcakes with a large rose tip. Some nonpariel sprinkles topped off the center. I thought they would be really nice for a wedding on a stand, with silver dragees for the centers.

1/2 sheet cake with 8" fondant USMC emblem cut from fondant, painted with paste colors and gold luster dust mixed with vodka. Buttercream frosting and piping. Fondant stars on sides, painted with paste colors and gold luster dust with vodka. Cake inspired by jkalman's avatar. The recipient's surname has been blocked out for privacy.

Little Mermaid Birthday Cake
Little Mermaid sits atop a piped buttercream rock covered in brown sugar sant. White chocolate shells colored with pastel coordinating colors and white chocolate coral sprinkled with pearls and edible clear glitter. Marbled blue and royal blue fondant over blue buttercream filling chocolate cake. Purchased cake topper and bracelet. Edible pearls and glitter sprinkled over cake and borders.
