Monkey Cake
I made this cake for my son's 1st Birthday party. As usual, I am not truly happy with the way it came out but it's not to bad either. I wish I had added piping gel to the black buttercream so the icing didn't break while piping. I also wish I would have gotten the monkey face's straight and symetrical! It was a hit though, an it was DELICIOUS (all from scratch pina colada).

Wilton Course 3
This is the firs cake for Wilton course 3. I have to say I am NOT happy with it even though it looks much better in person. Partly to blame is the cake pan, it does not have 90 degree sides, they angle outwards and the corners at the bottom of the pan are rounded. I would have liked much sharper corners. This was my second time covering a square cake in fondant. So, not bad for a second time I guess but definitely not where I wanted it to be. I am not crazy about the color combo either.

Blue Cake With Yellow Flowers
Quick, last minute cake for my sister's 9th birthday. Not entirely what I had envisioned but it turned out alright even though I broke some of the flowers. The flowers are fondant but I have come to learn that fondant is not very good for this sort of thing. I will definitely use gumpaste from now on.

Blue Cake With White Swirls
Everything about this cake was experimental and as you can see, most of it ididn't work. The buttercream (from the Whimsical Bakehouse book) tasted flat and didn't crust or harden enough for me to smooth it out. The spray painting (color mist) is terrible and the swirls are far from perfect. It was my first time trying those techniques. Thank goodness this was only made for my husband! Practice makes perfect!

After working mostly with fondant, I decided to take Wilton's Course 1 to conquer my fear of buttercream. This was the first cake we made and it wasn't as daunting as I thought it would be. The blue of the rainbow was actually a beautifully deep purple but for some reason it shows blue here.

8th cake I ever decorate and first stacked one. I made it for my little sister's 8th birthday party. Other than fondant troubles (home made), this cake was a dream to make. Unlike the previous cakes I've made, I didn't feel any pressure or stress. It was a lot of work but I enjoyed making it and my sister loves it. My family is impressed!

Cuban Flag
This is an all Cuban cake. It is three layers of "Drunken Sponge" cake with 2 thin layers of guava jelly filling and Cuban meringue frosting. I haven't cut it yet but what I have tasted is delicious. On August 3rd, 1995, my mother, brother and I left Cuba to be with my dad who was already in the US. This cake is sort of an anniversary celebration. It's a bittersweet celebration because I do miss Cuba but I love the US as well. Any excuse to make a cake! 6th cake I ever decorate. Thanks for looking

Hot Dog Cake
This is my first attempt at a sculpted/3D cake and the 5th cake I decorate. I cheated quite a bit. I bought the cake (madeira) because I only wanted to try the decorating part as I am a fairly confident baker. I also used frosting from a can to cover the cake underneath the fondant. The "bun" is too dark but I can't for the life of me achieve flesh color! Other than that, I am pretty happy with the way the cake turned out. It is a cake from Carol Deacon's "Perfect Party Cakes Made Easy".

My Birthday Cake 2007
4th cake I ever decorate. It's a vanilla rum cake with dulce de leche filling covered in rum flavored buttercream and then fondant. The idea was to just use buttercream but I have the darnest luck with buttercream and it wouldn't crust plus the color was streaky. The fondant was a bit messy at the bottom so I had to cover it with the thin strip. It didn't occur to me to do BEFORE putting the ribbon on. It was delicious! I'll cook the cake for a bit less next time. I loved how it turned out in the end

This was the third cake I'd ever decorated. It was a very difficult cake specially because I am learning on my own by reading a lot . The buttercream wouldn't set and kept on melting so the basketweave was runny . I thought about scrapping everything off and starting again but I didn't have time. This is a cake for a family birthday get together tomorrow. Four of us have birthdays in the space of one month. I have tasted it though and it's good. So much for impressing the inlaws :/
