'06 Easter Cake
This recipe was incredible ~ the kind you close your eyes and moan while you eat! Angel food cake split and filled with a tropical whipped cream mixture with pineapple and coconut... topped with strawberries. A very "light" cake. (just don't count calories from all the whipped cream!)

Chocolate Strawberry Cake
I made this not only to practise, but to have something to give my son since he couldn't have any of the shower cake he watched me make for my dil!! The flowers were made from a chocolate fondant recipe I found after being told by the Wilton teacher that there was no such thing.

Strawberry Shortcake
This was for my dil's bridal shower. I am so unsure about sizes of cakes so ~ although this was meant to feed 40, it probably could have fed 70. Strawberry shortcake is her favourite, so aside from the chocolate basketweave, it's white cake with whipped cream and berries. I ran out of chocolate used for the basket piping ~ so you see where one stopped and the other started.

Ivory Wedding Cake
This was a scramble to fix up! The icing was melting... the tiers collapsing.. There 'were' four tiers. When I started assembling them at the hall, they kept tilting and would have crashed. They smooshed into the lower cake and when removed; the top icing ~removed~ with them! Luckily I had brought a LOT of extra icing and the hall owner was able to "donate" the platters. The hydrangeas were not planned, but used to save the day! First wedding cake.. and for my son. (my DIL still loves me!)

Basketball Splash Cake
Okay, it didn't quite turn out the way it was in my imagination. I wanted it to look like a basketball had landed on/ruined a birthday cake. I want to try this idea again, but differently. The feather at the front was put there because the girl's name is Feather... she LOVED it!

Finnish-Style Celebration Cake
This is quite typical of the fancy occasion cakes the Finns have. This one was split into three layers; each layer brushed with Amaretto, a thin layer of apricot jam, then whipped cream. Whipped cream with almond slices around the sides, and as you can see, fresh and canned fruit with a gelatin-type glaze on the top. It was made for the birthday party they gave for my Mom after the church service. I think it served approximately 40. Tacky serving platter, I know.

Autumn Leaves And Pumpkin
Okay, I have to admit: I am SO proud of this one! It's hazelnut, hazelnut, with more hazelnut. The filling is a whipped ganache milk chocolate with choco-hazelnut flavouring. YUM! I think I'd have to put it in the "to die for" category. It's jkalman's smbc with fondant leaves and acorns... a few chocolate leaves thrown here and there. The pumpkin was cake. The bottom was 11X16X4. Thank you ALL for the ideas and inspiration!
