Fall Basket Cake
I finally finished my last Wilton course!!! I did them in random order. This is the final "Basket Cake" for course 2. I did it with a fall theme for 2 reasons. 1. I needed a reason to make Chocolate buttercream icing. and 2. Spring colors just don't fit well this time of year. I hope you like it!

Luau Cake...
This was for my mom's b-day. She didn't want fondant or buttercream...she wanted a double decker German Chocolate cake with the coconut icing. So be it. It was 90+ degrees and the stuff was melting everywhere...the only thing I could come up with to decorate it were these luau picks cause the cake looked like a giant island. After cutting the cake and eating 2 pieces it took a nose dive on it's way back to the fridge...oh well, at least it tasted good.

Red, White, And Blue
LOL. This cake is not red, YELLOW, and blue...it's actually just a hair off-white. I didn't have whitener for my cream cheese icing but you couldn't tell till I took the pic. (There is yellow lighting in the classroom) I am pleased with the way this turned out...after the icing was melting down the side of the cake (94 degree weather with no AC in the car) and I stuck my finger in it about 6 times (I'm a clutz today!). Today was NOT my day for cake decorating! Hope you like it though.

Black Eyed Susan
Did this cake for the Preakness, but it was my first time icing a shaped cake...I think I'll stick to stars! What a bear! Then the stuff I used on top was too thin and I was so frustrated that I didn't feel like thickening it up. The cake was strawberry though so the part with the chocolate on top made the whole thing worth it! It was yummy!
