Espresso Mocha
Found this recipe on the Coffee-Mate/Nestle's website and oh my gosh......I used instant espresso coffee and felt like I was on a caffine "high" the whole time it was baking and when I was mixing the icing. Not to mention taste-testing. Can't wait to cut into it tonight at "D"'s birthday dinner. The decorations are chocolate.

February Bridal Shower
Cake made with fresh strawberries and strawberry jello. Yummy! Cream cheese icing that actually crusted. Yippy! Used a whole packet of powdered Dream Whip for two lbs of PS and it worked. Attempted covering two with red (Toba's) glaze, but it took two coats to cover the icing. Probably wouldn't try this again. The cake stand was three plastic trays with vases in between as separators. HINT: Use something to stick the vases to the trays so they won't topple over when cakes are being removed.

Sunflower Tea Set
First, I would like to thank Serious_Cakes for the inspiration and for the helpful hints. Her how-to video really helped! As soon as I saw her's I knew this is what I wanted to make for my niece's bridal shower at a Bed & Breakfast Tea Room. The 6" cake and cupcakes were Chai Tea w/ BC, all other pieces (spout, handles, steam, spoon and teacup pedestals) were candy clay.

There Is No Place Like Home
My family and I made this ginger bread house display for the local Rotary Club's Annual Ginger Bread Contest. The house and Emerald City were ginger bread, tornedo was RKT covered with 6 pounds of RI and everything else was candy and MMF. We won "Best in Class Amateur Fantasy". We can't wait till next year! p.s. We first tried using cotton candy for the tornedo but it melted away over night. Good thing we started early and did a trial run.

Birthday cake for my niece who now goes to a school for the arts. Her specialty is drawing and painting. I took the little bags of colored icing to the party and the had soooo much fun adding their own artistic expression to their slice of cake and then started decorating each other with the icing. It was fun watching all the little artists going to town on each other.

First Attempt At Lambeth
A little something for my DH's birthday. I had been wanting to try the Lambeth method ever since I got back from the 2008 ICES Convention in Orlando. So this is some of want I learned in Carolyn Wanke Mangold's demo. Definately not compitition quality but I think it will do for my DH. lol Inside is turtle brownie cake made with a brownie mix and a cake mix. Another first for me! TFL

Uf Gator Graduation
This was for my daughter's graduation. She will be returning to UF this summer to begin her graduate study in Occupational Therapy. The Bible is chocolate with chocolate BC and chocolate MMF. The OT book is strawberry with fresh strawberry BC covered with white BC. The gator is yellow cake with BC. And the cap was made with dark chocolate.

Started with a two layer 9x13 cake, carved out the surfboard from the top layer and used the pieces to extend the bottom layer for the water. Used Wilton's Sparkle gel, in a tube, for the water. It really has a cool look to it. The rubber chicken is because the birthday recipient collects rubber chickens.

Foxy!
Well I finally did it! Carved a FOX. Started with two 9x13 layers and a cupcake made in the mini ball pan. It was fun but so stressful because it was to be displayed at an International Hunter Jumper Association dinner for 1000. Used a sour cream pound cake recipe so it would be sturdy. All buttercream except for MMF/Gumpaste ears and nose. It was the hit of the dinner Only about 40 people were lucky enough to get a slice. P.S. Thanks to several of you CCers for input in helping with this project.

40 Cherry Blossoms
There are not 40 blossoms on the cake. The Japanese symbols represent "40" which was the birthday gal's age. Shhhhhh, don't tell! Used the Chai Tea Cake recipe here on CC but cake has not been cut as of this upload. I'll let you know how they liked it. The branches and symbols are made out of modeling chocolate a friend gave me. I love that stuff! Icing is flavored with chai tea covered in MMF. Blossoms are also MMF. TFL
