Woodsy Wedding Cake
Roses, hydrangea, and wisteria all handmade from gumpaste. The separator stumps are also made of gumpaste and textured to look like the real oak stumps used as the cake stand. The cake is covered in a non-crusting buttercream, which was a real challenge to make edges and keep them that way while moving the cake in the Deep Southern US July heat.

50Th Anniversary
50th wedding anniversary cake for my wonderful mother-in-law. A joy to make for such an inspiring couple. Because there were several good bakers in the family, they each contributed a cake, thus the shape of my design. I iced it and decorated it with chocolate and handmade gumpaste pearls and topper. Grand Marnier orange with raspberry buttercream (bottom), chocolate with chocolate truffle, choco. and vanilla with Baley's buttercream, strawberries and bananas, creamy cheesecake, topped with an orange cake with honey,rum flavors and honey buttercream. The whole cake is iced with mouseline buttercream laced with cognac, then each layer is wrapped with Lindt white chocolate.

Volcano Science Project
BD cake for our science teacher. Eruption from dry ice and red whipping cream. Top of volcano was made from RKT and held a plastic cup. Valleys were cut down the mountain for the lava flow (thanks Melchas). Inside were layers of yellow and white cake with strawberry and chocolate cream fillings to represent the rock formations. There was a red cake center for the magma and vent.

Many Blind Mice
Halloween cookies for second graders. Sometimes one only has to look at nursery rhymes for something scary. "She cut off their tails with a carving knife!" Pretty scary! The mice are made from chocolate dipped kisses and marichino cherries. They sit on butter cookies formed and iced to look like Swiss cheese. The cookies were presented in a box with the nursery rhyme written along the perimeter of the box lid. Thanks for looking.

Turquoise And Chocolate
Fondant covered square cakes trimmed with ribbons and edible chocolate fondant pearls. Cake sizes 12,10,8 and 6. With such a simple design there was not much room for "oops" and cover up. So it was a stressful cake for me to make. I assembled the last two tiers at the site and had to apply the pearls to blaring obnoxious music. I dropped 1 in 3 pearls, good thing I had spares.

Southern Flounder
The flounder is made of a thin slice of cake cover with fondant and airbrushed. I learned the finer points of flounder identification with this cake; this is a 'southern flounder'. I used corn syrup to give it a wet appearance which was fun, but the color details were obscured. The sand is raw sugar, the oyster shells and gig are made from gumpaste. The groom liked Cpt. Morgan rum so I used some to flavor the cake and filling, then found a sample bottle and covered it with sugar barnacles and buried in the sand bank. It was a fun cake to make and was the least stressful of the two (I also did the wedding cake).

The Cat In The Hat
A tribute to Dr. Seuss for the school. The characters were cut from gumpaste and free-hand painted. The fish and the candle are sculpted using gumpaste. The kite is suspended on a black wire that wraps around all the tiers. There are stacks of miniture books under the middle tier and the polka-dot dress is on the side of the 'cake', but they are not seen to well in this photo. The hat and the cake have red and white striped cake inside, and the box has a red and white polka-dot cake inside. I had tremendous fun designing this cake!

Animal Print
Buttercream and white chocolate modelling clay. Unfortunately I did not anticipate the car to warm up so much that day; the modelling clay softened then broke. So the bow is a bit flatten. Tiger print on yellow, leopard print on orange, black buttercream panther lounging on top of bow. Daughter was thrilled despite the damage.

Yo Ho A Pirate's Life
I used the topsy-turvy cake style for the turbulent waters and cookies for the pirate ship. The treasure box, coins, jewels, swords, and shells were made from gumpaste and royal icing. Raw sugar was used for the sand. I used the extra cookie dough to make the "crew" in the foreground.

State Flowers
This is a birthday cake for my mother-in-law. The flowers are gumpaste and represent each of the states she has lived in. Magnolia (MS), pink and white lady slipper (MN), black eyed susan (MD), California poppies (CA), and although technically not the official flower, cherry blossoms for (Washington DC).

Space Shuttle Blast Off
The topper is made of hand painted cookies on sticks as a space shuttle, solid rocket boosters, and an external tank. The first tier represents the launch fire with cookie flames and the bottom tier, the smolke/steam. During the late night assembly, I forgot to carve the top tier in a conical shape. My son was still delighted nonetheless.
