Hi everyone! The only icing I have ever made is buttercream and I really like using it on my cakes. However, all the adults in my family always say its too sweet and that I should use icing that is not as sweet. So does anyone have any suggestions? I would loveee something that is not that sweet, but also lets me decorate (ie. make flowers). Ok please let me know! thanks everyone!!

have you added some salt to it? Just a dash?
Also, I make a crusting cream cheese frosting that you can actually pipe with and that's my biggest request for icings. YUMMY!

I had a request for less sweet frosting on a wedding cake this past November. I was quite puzzled by the request, but ended up using a ratio of 1/4 cup of cornstarch and 3/4 cups of powdered sugar. The consistency was exactly the same and the bride called me and told me the wedding cake tasted great and not too sweet.

My family loves the Whimsical Bakehouse recipe for buttercream.. It's not overly sweet.

sure! I'm not home right now, but I'll post it later this evening. I'm trying to remember it right off the bat, but can't.
Ever since I've put the salt in the buttercream, it's toned it down ALOT. I actually put a teaspoon of it, if it's a large batch of it.

Yes, I find a little salt helps a lot! The only problem I've encountered is once on a bright green cake I got white spots. Research here, told me it was my salt icon_sad.gif Since I've been using popcorn salt- it's much finer. So far so good. I've been thinking about trying the whimsical bakehouse's icing, too.

I had the same problem and I tried the French Buttercream on www.cooks.com

It seems that's the winner so far.

The recipe I use is the Buttercream Dream (from this site). It calls for half salted and half unsalted butter. I use all salted butter. Everyone seems to love it and says that it is not too sweet.

actually, I just compared the recipe that I was given for Crusting Cream Cheese frosting to the one listed here in CakeCentral, just use 3 lbs sugar instead of 3.5 and I add a tablespoon of milk.

Crusting Cream Cheese Icing
1 cup butter, softened
1/2 cup solid vegetable shortening
1 pound (2 bars) of cream cheese, leave it out of the fridge at least 30 minutes to soften
1 tablespoon vanilla extract
3 lbs sifted powdered sugar
1/2 teaspoon salt
1 tablespoon milk

Cream butter, shortening, cream cheese and extracts. Gradually add sugar and salt. Beat on low speed until nice and creamy. Last add the milk.
Add more sugar if you want it stiffer.
Also, it is going to have a light yellow tint to it due to the butter, I use Wilton's Whitener and it whitens it right up! Its easier than trying to find butter without dyes in it.
