How Would You Do This?

OK...I got a call this morning for a last minute cake order. She wants a chocolate 9" 2 layer round with chocolate mousse filling. The problem is that she wants it tomorrow but she is not going to serve it until Sunday. I already made plans for tomorrow so I'm going to have to stay up tonight to get it done. But how do I store it so that it can stay fresh until sunday. i know that I'm going to have to put it in the frige but can I cover it with anything to keep it from drying out? Thanks for any response I get.

whne I made my choc mousse cake I had it in a rounded airtight container in the fridge until ready to cut it.... and once it was cut all I did was "wrap" it in saran wrap (with toothpicks sticking out so frosting wouldn't come off) it worked really well...so if you have a container like that use it.

or put it in the box, and then wrap the box with saran wrap....I have seen many people do that too....

I would put the cake in the box that I was going to deliver it in. Then tape is shut. Place in the fridge and it would be OK. I don't think that you will run into any problems, as long as you keep in refridgerated.

I agree put it in a box and then even you might add a kitchen trash bag or even old grocery store bags around the box. icon_smile.gif

Thanks for your responses. I guess thats what I'll do. It will be in the fridge for about a day so it should still be moist and not dry right if I put a trash bag over it? Thanks - Kenya
