I have purchase a few cookie sheet over time, but Im just not happy with them. Anyone have a type that they like and would recommend? Thanks

i love my Chicago Metallic Professional cookie sheets i got from Williams-Sonoma. but now i'm thinking about getting the CM half-sheet pans with the rims because they're more versatile.

I bought some heavy gauge aluminum pans, half sheet size, and I love them. The bake evenly and are very sturdy. Also, they were only about 4.00 each. The brand name on my pans is BeaconWare.

I have two favorites.

1) Bakers Secret -I put parchment paper on them and they cook awesome in the electric and gas ovens I have used them in. I like that they cook evenly and that they cool quickly for the next set of cookies that I put on them. They are easily found at Wal-mart and Target too!

2) Stainless Steel - I made my own cookie sheets out of 16 GA SS. If you know of anyone that has access to SS that hasn't been contaminated by carbon steel I would suggest having some made. I just turned the four edges up at about a 45 degree angle to strengthen the sheet. Love it, except it doesn't cool down very quick so I had to put them in the fridge between batches to cool them down so my cookies didn't spread. (I got the idea to make them b/c I talked to my grandma about her cookie sheets and she showed me her stainless steel one that a friend had made her over 20 years ago and it is still her favorite to cook on)
