Will This Cake Be Easy Or Not For A First Timer?

OK Here I am doing something I said I would never do - A wedding Cake! My niece will be getting married in September and she asked me to do her wedding cake. She has picked out of the Wilton 2006 Yearbook Plumeria Promise. I don't have the book and will have to see if I can still purchase it.

Have any of you made this cake or have pictures of it? I have only looked at a black and white scanned picture that she emailed me. If any of the seasoned wedding cake decorators could let me know if you think it will be an easy one for a first wedding cake. She also said that we could scale it down to serve 200 people. The cake serves 332. She also wants it in buttercream not fondant.

PLEASE give me any advice you can, as I won't be breathing from now til Sept. 2 the day after the wedding!

I am looking at this cake. Have your worked with fondant? I think the design is fairly simple and if you are not comfortable trying to make the flowers, you can order them over the internet. You still have several months to practice. I think you can do it. Your cakes are very pretty.

Getting rid of that bottom square tier will take you down to 204 servings - so that'd be the way I'd go! I think you could do this design in buttercream fairly easily, and those flowers don't look too horrific to do either. I can scan and send it to you in colour if you let me have your email addy (pm it to me if you prefer!)

Edited to say: ignore my advice above on the servings! I just read the instructions and realized that the bottom tier is 20in, not 16in - so that throws the numbers out by loads! You'd have a major re-jigging to do to get the servings you need. I'd go with a 16 x 4in square at the bottom, 12 x 5in round, 8 x 2in round and then the 6 x 3in top tier - that should give you roughly the servings you need - 210 (more if you aren't going to keep the top tier - 222).

Thanks - Bonjovi and Cindy. I think I can do it. I also have to figure out how much to charge her. I won't charge her a bunch since she is my niece, but she will have to pay for all the ingredients and such to make it. I can't afford to pay for the ingredients.

just tell her that. Keep your receipts and get her to reimburse you as you buy the supplies.

Sorry, I wasn't paying close attention to your post. If you are doing it in buttercream, you should not have any trouble. The scrollwork doesn't look too complicated. You can get the Wilton scroll templates and it will be super easy.

I think I will be giving it to her as her gift and just charge her for the ingredients/supplies. That's a pretty good gift because I figured it to be about a $500 plus cake.

Have any of you done a champagne cake? Is it a nice sturdy cake for stacking?
