Does Ganache Have To Be Refrigerated?

It depends on the consistency you want. When I pour my ganache over my cakes (two in my pics) I pour immediately once melted. If you want to use it as filling inbetween layers you can let it sit on your countertop to thicken or put it in your fridge then whip it.
Ganache can be left out of the fridge for 2-3 days without spoiling. As long as it is a traditional recipe (ie not low sugar or low fat etc) I would just keep leftovers in the fridge.
You can leave it out or put it in the fridge... Depends what you want to do with it... When i was working at a pastry place once we had made it we would put cling wrap over the top (so there is no air) so it wouldnt for a skin and also to keep dust and that off... and put it under the desk ready for the next day....
