Have A Question About Cake Mix...need Reply Asap!

Can cake mix be refregirated for a few days? I've got to make my course III cake for tomorrow, and I going to make 2 cake mixes, but I know I'll have some left over. I dont want to throw it out. I want to use the leftover in a couple of days for mini pumpkins. And if it makes a difference, I'll be using the cake mix extender.

Yeah, Im done now and I used 2 cake mixes and my layers were really thin. I could've used 2 1/2, too. Oh well, a lesson learned.Thanks for advice everybody!

I made mine from scratch and had full 2 inch cakes. That to me is one more reason to use scratch recipes (if you have time of course) I thought my cakes were going to turn out like skinny little hockey pucks because I doubled the recipe and forgot to double the leavening. Oooops! Then they rose to fill the pans and I'm glad I didn't add the full amount or I would have had an oven full of burned batter!
