I was wonderin if anyone had a recipe for a lemon filling. The kind that is in a lemon filled donut, or someting like that. TIA icon_smile.gif

Hi

I have had many people tell me that they have used the lemon filling you make for pies. It is quite thick and holds up.

You could always use lemon curd. You can usually find that in a grocery store.

You can buy it in a sleeve container at our Michaels, but I really like the lemon curd made by Robertson's better. It is in the jam and jelly section of our grocery stores here.

The lemon filling I used for one of my cakes this last weekend that everyone LOVED....my brother called it SEXY!

1 Package of Lemon instant Pudding
2 cups heavy whipping cream

Mix two with hand or counter top mixer for about 1 min 30 seconds......you will totally be able to tell when its ready. It almost immediately starts to thicken!!! MMMmmmmmmM!!!!!!! You can do this to I think about EVERY instant pudding! I also did it with the cookies and cream instant pudding and the cheesecake instant pudding. Yum YUM!
