My instructor said for class purposes we HAVE to use the recipe in the course book. I'm wondering how it tastes. Any flavorings you can add to jazz it up?

Well, if you've never tasted any really good buttercream, you'll think the Wlton recipe is pretty good. What I used to do to jazz up the Wilton recipe is use Wilton's butter flavor extract and I used milk instead of ater.

If your instructor insists on you using it, you should. After your class is over, find yourself a really good tasting recipe and stick with it. You may have to continue to use the Wilton recipe for borders, etc. until you get used to using different consistencies of buttercream. Once you get used to the right consistency for bordrs, etc., you'll have no problem adjusting your favorite recipe.

I used some vanilla, butter and almond flavorings to doctor up that taste. It is the easiest to practice with, especially the Wilton rose (or as I make, Wilton cabbages!)
My 3 year old said it was the most yummiest icing he ever tasted. That coming from a kid who recently licked a subway window because he liked it!
Good luck in class!

For what it's worth, I used butter flavoring, vanilla, and a little salt to flavor mine. I used to give all my class cakes to a friend of mine, a 38 year old man, who thought my icing was "SO GOOD". I still use pretty much the same recipe, but I use half butter/half crisco.

Well, I personally think the Wilton Buttercream is disgusting, but it's really good for beginners, and that's why they have you use it n class. My Wilton teacher knows that if you bring a cake to class, you're probably going to end up eating it, and she doesn't care much if you use another buttercream. My teacher is pretty lenient though. She figures you should learn with whatever icing or fondant you're going to use most of the time.

I agree that the class buttercream is not good! However, when your learning technique and consistencies, it is great.

If you add butter and vanila flavoring to it, it actually isn't too bad. It seems to be what people here prefer. I've tried half butter and half crisco, all butter, all crisco, and people always choose the wilton. I've had several customers tell me if I ever change "their" icing, they won't order from me.

I am currently in the Wilton course 1 classes and last week when I made my first batch of Wilton icing up I then knew what basic recipe many bakeries use to ice and decorate their cakes with. Having been a cake baker (but not decorator) for many years now, I have tasted several other buttercream icings. Some are better than Wiltons and others are worse. The Wilton is not an awful icing by any means but is a rather good all around icing to use for taste and decorating in my opinion.
I have been adding Vanilla, Almond, and Butter flavorings to mine and everyone says it tastes good.
