Bumpy Middle Part On Cake

Hello,
Just finished my Wilton course and so now I have been making cakes. My problem is when it's done, it has a bumpy part in the middle. Is that air? If so how do I not get so much air in? icon_razz.gif
pleae any idea's will help?!?!?!?!?!?

Here is a tip to get rid of that dome.....as soon as you take the cake out of the oven, take a damp paper towel and drape it over the cake. Take a slightly smaller pan or plate and place it on the paper towel. Apply gently even pressure on the cake for about 20-30 seconds. Just like that the dome will be gone. It must be done as soon as the cake it out of the oven or it won't work.

icon_smile.gif Is it also inside the cake or just out side on top ? If the inside looks fine, don't worry about it.. just cut the top off..what's important, thumbs_up.gificon_smile.gif it is baked and the texture inside is ok.

Can you describe it a little more? What do you mean "bumpy"? Just rounded at the top or a lot of little bumps?

I'm actually surprised when a cake comes out of the oven perfectly level and flat on top icon_smile.gif . I think the slight bump in the middle is common and pretty normal as long as everything else checks out okay...not overdone on the outside or anything. It's what cake levelers were made for...just trim it off. The squish method works to and I've used it with dense cakes but for light cakes that you want to be fluffy, I think it's better to level rather than squish.

That's a really good question. A lot of little bumps could be air bubbles that rose to the surface. I've had that happen. I tap the pan on the counter a few times before baking to get the bubbles out.

oh thanks for the info from you all...what it look's like is in the middle alot of little bumps. Not a mound but bumpy...and it's always on the top of cake..I can always turn it over...but I was just wondering what causes those "bumps"!!! icon_sad.gif

Those would be air bubbles drop the pan of batter on the counter before baking like recommended in a previous post. That should help.
