I need quick advice from everyone. I have a cake due on Sunday, well with the threat of the hurricane coming the person decided they want it delivered Friday but not going to serve it until Sunday. It is a sheet cake no filling but my question is I use the extra special buttercream icing on the cake and fondant decorations. I know the fondant can not be refrigerated but will the b/c be ok to sit out for 2 days or should I use regular b/c with out the whipping cream added. It also will have cookie crumbs on top for sand they cant go in fridge either can they? I need quick response pleassssssssssssssssse.
I don't know much about the fondant, but from what everyone has said, if you NEED to put it in the fridge, put it in a box so that can shield it from the moisture in the fridge. I use the BC with whipped cream as well and have never had a problem leaving it out, I would think about 2 days would be the max though. I usually refrigerate my cake with the b/c on it so it's nice and cold when I deliver it, that way if they want to let it sit out, it should be ok for a longer period of time. If only your decorations are in fondant, maybe you could wait to put those on until right before or even after delivery? Anyway, hope this helps a little bit. Good luck, dang hurricanes
