On Tuesday, I baked butter cake mix with extender recipe in 2 12x2 in. round pans. I then froze them, on Thursday I took them out of the freezer and frosted them. On Friday morning I decorated and the cake was done. It was for a party on Saturday. Well, we have a blizzard here in our area so the party was cancelled Satuday until today (Sunday) but the weather and roads are still bad so I don't know if the party will even be today. How long will this cake be good for?? Frosting is buttercream.

Ok, does anyone know?? We are snowed in and have decided not to go out although we may try later today but I don't know if the cake will get there for the party and I have my doubts the party will even be today but shouldn't this cake get eaten if it's been out of the freezer since Thursday?

Odds are the party will be held off until next weekend, or cancelled outright, right? I would get a fork and start digging in! icon_lol.gif

I want to know as well. I'm making a birthday cake in advance and want to know how long I can freeze it...

Well, party is postponed until next Saturday so I'm getting the cake ready to put in the freezer and hoping it will be okay. Does anyone think it will be okay if I do this?

After it's frozen take it out and wrap it well so it doesn't get freezer burn, take the covering off before you defrost it though so the icing doesn't stick. I think it should be fine.

I wouldn't want to eat anything that had been handled in this manner. It has already been frozen once, and out of refrigeration for over 3 days- I would be concerned not only about food safety, but flavor as well. You should probably start over, especially since this cake is obviously for people other than just you and your family. Sorry!

I wouldn't serve it at the party. HOWEVER baking smells wonderful when you're snowed in...Image Makes the house warmer, too...

I have had a customer actually call me to say that they had saved a cake they got from a bake sale for 2 WEEKS!!! and that it was just as moist and delicious as the other one they had purchased the same day from me. Personally I would make a new one... it would weird me out if I knew how long the cake was out for. Also I think if it would depend on what the filling was. Mine was buttercream.

yes, I'd make a new cake too. But all is not lost, simply take the cake you have now, break it up into pieces and put in a big bowl, then mush mush mush into a fine crumb/dough like substance (cake, frosting, filling and all.) Roll into little balls, freeze for an hour then dip in chocolate and voila -- cake balls!! You can donate this to the cause if you like, just to help get your name out. I do that on occasion. I would make a new one, too. If the cakes hadn't been frozen already, then I wouldn't worry so much. I would eat the finished one!!!
