Buttercream keeps in the fridge for a couple weeks no problem. I normally have to add a tablespoon of water and rebeat it for a minute, though.
You'll be fine. Just stick it in the fridge until you need it and re-whip it before you use it.
I froze some buttercream about 2 months ago and I'm thawing it out to ice some cupcakes. It seems perfectly fine too. Now I know what to do with my left-over icing (that is instead of eating it...which is what I normally do!!!) ![]()
