It's basic science ..... as the cake cools, it contracts, thus pulling itself away from the sides of pan. That's why you let it sit in the pan for a few minutes before flipping it out. So it can cool and contract, pulling itself away from the sides of pan and therefore not sticking to the sides of pan when you want it to fall smoothly and easily out of the pan. I'm not sure you can changes the Laws of Physics. ![]()
