so, its nearly time to do my first weddig cake ever. For my sister. Only two weeks away!!! I spent all this weekend piping and carving out white chocolate hearts that will go around the sides in a mosaic style over 4 tiers. As you can imagine- much chocolate EVERYWHERE!!. I just have a few last min. questions I thought some of yyou brilliant people would be able tro help me with...
1. The tiers are 12", 10, 8, and 6". I will be stacking on site because the wedding is 3.5 hrs away. Do I need a center dowel, if I am using support between the tiers?
2. I am a bridesmaid (preparations for that)...and I also have to set up the cake on the morning of the wedding. How early can I do it. The reception isn't until 6pm! Its all mud cakes (currently uniced in the freezer), with ganache icing.
I dont want the chocolate hearts to slide off during the heat of the day.
Any advice would be really appreciated!!!

I just finished my first wedding cake yesterday and be careful about stacking if your using dowels!! Make sure to use enough dowels and to make the support as even as you can! My cake started to slant backwards because i didn't have enough support in that one spot(i used over 8 dowels in my 12" too :/). I would also use the one big dowel down the middle as a precaution. Good luck!!!
I use the plastic cylinders for support under my tiers and have never had a problem with them. I just prefer to use then as I had a cake shift some on me with the wooden dowels. I've tiered them up 4 tiers and have had no problems when using this type of dowel. If your room is cool, you shouldn't have any problems setting it up in the morning. I've set up quite a few as early as 8 a.m. in the morning and the wedding wasn't until 5 or 6 p.m. that evening... as long as no one tries to move your cake once assembled and the room is kept cool, it should be fine
