I am new to baking and i'm so happy to have searched this website!
I am planning to make choclate cupcakes for my daughter's valentine school party. I want chocolate cakes with a easy to do frosting that's not too sweet. I just practiced a batch of cupcakes, and i am having some problems. i did them from scratch, thinking they are better than from box.
Are cupcakes suppose to be flat? they had a nice round top when baking, after i poked one to see if they cooked through and removed them from the oven, the started to deflate! I was hoping to get nice rounded tops..kind of like muffins?
I found a recipe calling for sour cream, cause that's what i heard makes it 'moist'. But they didn't seem that moist to me. I used low gluten flour (cake flour i suppose?) instead of regular all purpose flour also.
I got the recipe from a book 'Cupcakes!' by Elinor Klinans (bought it from William Sonoma) It just doesn't seem all that great!
Here was the recipe:
3 oz unsweeten choclate, chopped
1 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup butter
1 1/4 cup sugar
2 large eggs
1 tsp vanilla
1/2 cup sour cream
1/2 cup water
Also, maybe there was too much butter? the bottoms were so oily it bled through to the pan. or is that normal?
Any advice and help is greatly appreciated!

I bake both from scratch and mixes. Honestly I prefer cupcakes from a mix rather than scratch, the scratch mixes seem a little dry to me but maybe I just overcooked them which is very easy to do with cupcakes. Why don't you try the cake mix extender or the super enhanced cake formula from this site, they are both really good and will give you about 28-29 cupcakes. Use an ice cream scoop or 1/4 cup measuring cup to measure your batter so that each cupcake is the same size. I find that with my oven I bake for about 10 mins, rotate the pans then bake for another 10 mins. They turn out perfect with a nice dome. Good luck!
I have been searching this site and found so many rave reviews about how good the white almond sour cream cake is! I'm going to try that one but use chocolate cake mix instead. I think I'm just trying to hard to find a 'perfect' cake recipe.
