Help With A Carrot Cake!

I am making the Honey Carrot Cake (from recipes section) for a co-workers bridal shower at work - the Bride-To-Be loves carrot cake. The recipes says to use a 9x13 cake pan - but I am really wanting to make it a little larger and use a 11x15. How would I adjust the recipe to accomodate the larger pan size, or is it fine to leave as is?

Also, would it be better to layer the cake and fill it or just leave as is with the cream cheese frosting on the top?

Any help guys.....the shower is tomorrow and I will be working on this cake tonight.

I have never tried this with this recipe but, I have always added half to the recipe to make it fit a larger pan. Like I said I have never tried that theory with this particular recipe. Hopefully someone else can help you better than I can.

I would double it. I know that a regular cake mix fills a 9X13 and it takes 2 cake mixes to fill an 11x15. So in that case I would double.

..I would double it too! If there is leftover batter, you can always put it in another cake pan and bake that separately. I'd rather have have too much than not enough! Good luck!!

I agree to double the batter. And as far as whether or not to tort and fill it, I guess it would be personal preference, I don't normally tort sheet cakes, but in my opinion, I would tort and fill it just b/c the cream cheese icing of a carrot cake makes it complete! Plus it would look nicer since it's for a shower.
