A bride I am working with has requested a german chocolate cake for her wedding. Up until 2 days ago I had never even made a german chocolate cake because I despise coconut.

My DH, who is my best critic because he always tells me flat out if it's horrid or tastey, gave me a few pointers and told me to try again (this after eating 3 large slices - he had to make sure). His only complaint was that my coconut was shredded and not flaked.

Have you ever used german chocolate cake for a wedding cake and if so how many actual cake layers did you have? 2 with filling in the center? 4 with filling between 3? How do you get the cake level with such a thick filling?

She also wants a strawberry cake and I have tested about 3 recipes so far and hate every one of them. Anyone have a good recipe for strawberry cake??

A few days ago it was to be covered with buttercream and now it's fondant and tomorrow it could be chocolate for all I know. The woman is driving me bonkers as it is and I am just a huge mess.
