I have to make 4 dozen mini-bownie's for an order tomorrow at 9 am and all 3 dozen so far have broke apart! The tops are just tearing off of the brownie bottom. I have only 4 out of 36 to use right now and I'm freaking out because I have a LOT more items to make yet. Does anyone know what to do? Or have a better recipe that this won't happen too?





Don't worry, I'm saving the scraps!

you mean the tops are breaking off of the bottom??? what are you making them in??? Like a mini muffin tin or something?

yeah, the tops are breaking off the bottoms. I'm using the mini's pan to bake them in too. icon_cry.gif I never have a problem with brownies----curse you mini-pan!!! OK, deep breath in and out! Should I not use a fudge type brownie then and do something like a cake like brownie or will this happen again?

I haven't tried the fudge type brownies in the mini pan, so I can't comment on that. I've had really good luck with the cake type though. And are you greasing the pan really well? I find that with the minis I have to put almost twice the grease/remover than I would normally. I love the size of the mini pan creations, but I don't use it often, because I have so much stick to them.

I'm wondering if the cake brownies wouldn't be better in the mini pans. You know, the fudgy brownies are "heavier" than the cake brownies. Just a thought.

I think I'm going to make up some cake like brownies like you all suggested and see if those won't stick. I'm crossing my fingers on this one!

I always bake my brownies in a 1/4 sheet pan, I grease the bottom only, and then put a parchment liner in to fit the bottom only.Of course you can bake them in a jelly roll pan too. Don't overmix, just enough to incorporate the ingredients. Don't overbake, this can happen especially in the mini pans. When mine are done, I let them cool about 10 minutes, and then flip the whole pan on a board or parchment paper. When they are completely cooled, I ice them and then put in the frig for about 20 minutes so the icing is cold. I then use a hot knife and cut them in 12, or 24 for mini's. They will never stick using the parchment liner in the pan.

You need to wait until they cool down to take the out of the tin, maybe you are in such a rush, you are not waiting enough

Thanks everyone! I made the brownies more cake like and they popped out of the pan just fine when I fliped them. Thank goodness!

I got to bed at 5am by the time I was done and up at 8 to get ready to deliver it. I'm SO TIRED!

Cupcake--that's a good idea about doing them in the 1/4 sheet pan.
