I am making a sheet cake for about 30 people but am putting something on top of it that is quite large. So= I am making a 1 layer about an inch thick chocolate cake 12x18 pan. Do you think that would not look nice to have a 1 layer cake? I know from the wilton book it says that a sheet cake that large feeds 70+ for a 2 layer cake so I just cut made one layer. I figure i can cut the cake into large pieces- so everyone would have a large piece. Or should I make another layer to go on top of the chocolate? But then I would feel like i have made too much cake. I don't know... What do you think?

I usually only do one layer of sheet cake, but I do fill 2/3 instead of half (I use 3 in deep round pans) and I'll still tort the sheet cake, it is plenty tall enough!

If you look at my soccer cake it was a 12x18 and only one layer thick.......I thought it would look strange and I always have done two layers in the past........but once it was iced and all I thought it looked fine that thick!! We only needed about 20 servings so two layers would have been WAY too much!!!
