I also use the juice instead of water, and I also add some drained crushed pineapple to the mix. With the pineapple rings or more drained crushed pineapple I usually melt one stick of butter in the baking pan first, put brown sugar in and pat it down, then put the pineapple in and then add the cherries on the top of the pineapple, I then pour in the mix and bake. It will take longer to bake then normal. It is real important to drain the pineapple or it will be too much liquid. I make alot of these, they are so good! Good Luck.
I agree with all of the above but I'll share my Grandfathers secret for the BEST pineapple upside down cake....bake it in a large cast iron skillett !!! They always tasted sooooooooo good!
I just found an actual pineapple upside down cake pan the last time I was at the thrift store. Instead of the sides being just round, this one makes them scalloped and has indentations for where the rings and cherries go. Best part - I only paid .90 for it! Now to make a pineapple upside down cake. We've made them in Girl Scouts while camping and each girl made their own individual ones with tuna cans and one pine apple ring. Very cute and no one fought over the cake.
