I was wondering how many of you add a package of instant pudding to Betty Crocker and Pillsbury cake mixes, since they already have pudding in them.

I always add pudding and an extra egg, regardless of the brand/type. I figure, more pudding can't possibly make it WORSE icon_smile.gif
Actually I usually use DH, but last week used BC (added pudding) and I was SOLD, it was delicious and rose much more than DH.

i thought i read somewhere that putting a pudding mix in the cake mix gave you more of a pound cake. i wanted to make pound cake the "easy" way but couldn't find where i read that

I always use Pillsbury, and add the pudding, an extra egg, and the 1 C each of flour/sugar/sour cream called for in the Extender recipe (plus a pinch of salt and either vanilla, almond or whatever flavoring.) My cakes get rave reviews from everyone, every time.

when you add all of those extra ingredients...how many layers do you end up with?

"when you add all of those extra ingredients...how many layers do you end up with?"

It depends on what size cake I'm doing.

I go by the cups-of-batter, per-layer, per-size Wilton chart that is posted here on CC: http://www.cakecentral.com/article14-Cake-Baking-Cutting--Serving-Guide---2-in-Deep-Pans.html

Rather than getting the 4 to 5-1/2 cups per cake mix, I end up with around 7 cups of batter per box when using the Extender recipe.

For exampe -- I can get one 8" round and two 6" rounds out of one box, Extended.

Does that make sense? I think I've just confused myself! icon_wink.gif

Buy a DH yellow cake mix and read the side. Pound cake recipe there. I only use Pillsbury but have never added pudding to it. But, after reading this thread....I guess I HAVE to now! LOLL

That's awesome. I have never tried that before. I have 5 cakes for this weekend, maybe I'll have to try it out. Is the flour regular flour or cake flour? Thanks for the tip! icon_smile.gif
