Amount Of Filling For 12X18 Sheet

I am trying to figure out how much filling to make for a 12x18 sheet cake. The filling is going to be a chocolate cream. Also, any good fluffy chocolate recipes out there? Thanks for your help.

I know there are charts out there that people use but I just start putting filling on until it looks right to me and just doesn't overflow. I do make a dam around the edge too. I'd guessitamate somewhere between 2-3 cups of filling for that size cake.

When you say good fluffy chocolate recipes I'm guessing you mean a fluffy type filling. I love the Pastry Pride chocolate. I whip it up and it makes a super yummy, light chocolate mousse.

Yeah, I'm one of those "until it looks right" cooks, too. If I have any filling / icing left over, it goes in the 'frig for the next one. If I run short, I make another batch.

I usually use the pastry & pie filling that comes in the plastic sleeves (if that makes sense). One sleeve fills a 12x18 nicely.

I don't think I've ever measured filling.... just go by looks for those.

Thanks for all the help. I checked at our Walmart and they do not sell or use pastry pride. I did find some filling in plastic sleeves at our local cake decorating store. The chocolate filling looks more like pudding. I would have liked to use something like Twinkie filling, but chocolate. Maybe I will try to play around with that.
