Need Help Quick - Buttercream Recipe

Hi all!! I have been having nothing but trouble with my buttercream recipe and I can't seem to get it to come together like it should, all it wants to do is separate!!! This is SOOOOO discouraging icon_cry.gif . I have a birthday cake to make for Saturday that is going to be carved in the shape of a hand and would appreciate any guidance on a great buttercream recipe that would work for what I am going to be doing. The cake is going to be chocolate, and will be baked in a 16 inch square pan, frozen, then carved. I really appreciate any help and suggestions! icon_biggrin.gif Thanks in advance! Leslie

I have looked here and I hate trying a recipe for the first time without knowing how it turns out... that is why I asked CC folks for their opinions about what they think is best. icon_smile.gif

What recipe are you using? It sounds like you may have added too much liquid if it is a basic butter cream. You can try adding a bit more crisco/butter and sugar. Hope you figure it out!

Recipe is very basic, 1/2 lb butter, 2 1/2 cups powdered sugar & 1 3/4 cup heavy cream. Combine butter and sugar in food processer, then slowly add cream while continuing to mix. Transfer to stand mixer and beat till creamy. The last couple of times I have made it I mixed for upwards of 20 minutes with my stand mixer and it still didn't come together! Very frustrating to say the least!!!

It sounds like you're using too much liquid but I'm not sure.

I use this for frosting my cakes:

1 cup softened butter (sit out at room temperature)
3 cups powdered sugar
1 tsp. vanilla
Approximately 3-4 tablespoons of water (you could use other liquid) I thin it down enough to make it easier to frost the cake.

Mix butter and vanilla for a few minutes then add powdered sugar and water.
