I have a wedding cake to make in Italian meringue buttercream with palette knife decoration including gold leaf and other things. It’s for a summer wedding here in Australia just after Christmas. I’ve read that decorated buttercream cakes can be successfully frozen but I’m assuming that’s likely American buttercream. I’d really appreciate advice any advice. I’d like to make the cake four weeks out. Thanks
