Why Are My Cupcakes Flops???

I make them by the box, temp, time, ingredients, etc. But, 5 minutes after they are out of the oven the center of my cupcakes sink in. I checked my Wilton books for reasons, beating too long, wrong temp. They are still sinking...I have an event tomorrow and don't want to take soggy looking cupckes...any ideas????

Do you check to see if they are done in the middle with a toothpick? They just might need more time than the cookbook states and it's the centers, of course, which get done last.

Sounds like they are underbaked check your temp on oven with a thermometor maybe 350 isn't 350 and they are not rising enough. Just a thought.

thanks for the quick replies!! super! I feel like a goof that I am having trouble making simple cupcakes from a box!!! icon_redface.gif

I left the last ones in until they turned almost dark brown (23 min) and they sunk. The centers are done perfect and they taste great!

I am about to make another batch. wish me luck and I will check back if anyone has something to add! thumbs_up.gif

Have you poked them in the middle with a toothpick to test if they are really done? Its a simple test that never fails.

I can also suggest what I do, try baking them a little longer at a slightly lower temperature (instead of 350 degrees try at 325 for 5-10 more minutes than what it says in the box, or until the toothpick comes out clean). Another question, are you at a high altitude? If so, add less water to the mix (2-3 tablespoons less water). I also keep in my oven a stone cookie sheet to distribute the heat more efficiently for all my baking.

Sounds to me like a prob with the oven temp. However, this has never happened to me. I would try making them in another oven. HTH! And good luck! icon_smile.gif
