Can I make ganache with Wilton wafters? I want to make different colors, to make a melted ice cream cake. What is the easiest ganache?

Yes, I do it all the time. 3 parts candy melts to one part cream. Cool to room temp. Use on cold cake.

I do the same.  It's a lot easier to use colored candy melts than to try and color white chocolate ganache.
