I have a request to make this cake and I’m just a home baker. I’m wondering since I’m doing fruit cake with marzipan, what icing should I put on top to get this effect? Thank you for any advice!!!
I am in the USA, so the idea of covering fruit cake with marzipan and frosting is foreign. We eat it plain. Although I have covered fruitcake with marzipan, as taught to me by my British friends, I've never covered the marzipan with anything. I believe in the UK, they usually use royal icing to cover the marzipan, but this cake appears to be buttercream, which would also be just fine. You can use any type of buttercream, American, Swiss Meringue, Italian Meringue, etc.
