I need to make about 50 cake pops (with out the sticks), Can bake, form, and, dip them a few weeks a haed of time and freeze them? of will the crack?

Also I would like to use home made carrot cake with homemade cream cheese frosting. Am asking for trouble would it be better to use a mix?

I just see  I asked this question about 3 years ago! I think i will make the cake balls and dip the wek of my party

I've never tried it, but I doubt they would crack when thawed. Ganache on a cake doesn't crack.  To be on the safe side, I would bake and form the balls, freeze and dip the day before the event.  If you will be able to keep them refrigerated, there should be no problem with using your homemade carrot cake and cream cheese frosting.  Be sure and chop the carrots very finely so the mixture sticks together firmly.
