Ok, this is probably dumb, but I'm tired and not seeing straight. I need to make a sheet cake (12x1icon_cool.gif and I think I'll try and go with a box recipe because I'm not sure if one made from scratch will remain moist like a lot of people on here have written about. So the recipes I ran into (durable cake) says its enough for a 9x13 cake. Can I double a cake recipe or is that asking for trouble? Are there cake recipes especially formulated for 12x18 cake pans?

this is probably silly to ask, but darn it I rather get some feedback before going further.

I have to say I am beyond impressed by the caliber of talent here. I feel like an ant!!

I'm a "mix" baker and here's what I used for each pan:

9x13 - 1 mix
11x15 - 2 mix
12x18 - 3 mix

I can't really remember the last time I made a 9x13 but I do recall that the last time, I made a mental note that it should be a little more than one mix.

If you doctor the mix go a little less than 3 for the big pan. Like 2 cups less. I use the baking strips too (I know some people hate them but they work great for me). The doctored mix is on this sit ebut I'll PM it to you if you can't find it.

Good luck!

FatAndHappy, do you mean the durable cake recipe? I saw that one. Please PM me with the recipe if that's not the one you meant. Thanks!
