Has anyone used a cocoa butter colouring to airbrush onto chocolate ganache(cake) or chocolate decoration?.

If so how do you make sure the chocolate ganache/chocolate doesn't melt when your airbrushing the cocoa butter colour on ?

As i know your cococa butter colours have to be a certain temperature to be airbrushed to stop it hardening inside.

Ditto what kakeladi said!  No way would I put cocoa butter in my airbrush.  It seems the melting temperature of the ganache and the cocoa butter would be about the same, so it sounds like a super tricky thing to do.

Maybe if your ganache covered cake was well chilled....really well chilled....the melted cocoa butter would set up fast enough to prevent the ganache melting?  I would not do it.
