I need recommendations for a good candy thermometer that I can get on Amazon. I need to make sugar syrup for a buttercream. The thermometer should be able to read about 1" of liquid. Can anyone recommend a good one - with a link please?
In relation to this, I tried testing making the syrup with a meat thermometer that I have. The temperature kept fluctuating when I held the thermometer in the pan ... I pulled it off the heat as soon as I saw 240 and then it read 250 a few seconds later. I tried doing the soft ball water test. The sugar turned sappy but sunk to the bottom and I had to dig it out..it never really formed into a "ball". Does this mean my temperature was right - 240 degrees?

I used to us a candy thermometer from the grocery store and it worked just fine. Now I have an instant read thermometer, but my little no-name cheap one did a good job for many years. Just like this:
