I was asked to make a baby shower cake, and i would really love to make a block. I have 9" square cake pans. I am planning on making 2 2-layer cakes (or a 3 layer cake if necessary to obtain a final height of 9") and stacking one on top of the other with the 2nd cake on a cake board. do i cover each 2-layer cake with buttercream, and then stack? then, once stacked, do the final decorating?
I have never stacked cakes before... is it hard? should i scrap the idea and just do a sheet cake?
Stacking cakes isn't hard but you have to use proper construction or your creation could go down the tubes. There is an article in the tutorial section on construction.
If I were making 2 2-layer cakes this is what I'd do:
get first 2 layer cake together (I torte and fill, some just fill between the 2 layers) on cake board.
Crumb coat it and put a slightly thicker layer of icing on top. Sprinkle with powdered sugar to prevent the cake board from the next tier from sticking.
Then fill,crumb coat 2 cake (which is on cake board).
Dowel bottom cake, stack 2nd tier and ice whole cake and decorate!
Then sharpen long dowel cut to the height of entire cake and using mallet tap sharp dowel thru layers of cake and cake board for stability.
For the cake you are making I wouldn't necessarily separate the cakes but for a regular tiered cake I separate the tiers then cut and serve. The last wedding I was at they didn't separate. They just carefully cut and served without mashing the tier below.
