Hi 

I am doing a birthday cake and looking to ask if i can emboss the fondant icing once it is on the cake ?

It depends upon what you are using to do the embossing.  There are YouTube tutorials which show how to emboss after the fondant has been  applied to the cake.  They are using what appears to be flower cutters or cookie cutters.  To use an embossing mat, I think you would have to emboss the fondant before putting it on the cake.

If you are trying to do an all-over embossed pattern, you would need to emboss before applying the fondant to the cake.  in my opinion, it would be best to panel the fondant, rather than drape the fondant over the cake.   With paneling, there would be less smoothing required, therefore less damage to the embossing.
