I'm a little freakin out right now!!
Feb 15 is this lady's son's bday. She wants a football theme with whipped icing. Any good recipes? Haven't tried to make my own yet. How do you knwo what to charge? Do you charge per serving? Do you use the local walmart prices for cakes then go from there? I know I can make a cake. I'm pretty sure I can deco it.... just still freakin a little!!! ![]()

I just got my first order to for the 17th. Scary!! It's what I wanted but now that I have it, wow, I'm nervous!
I just called around to local bakeries and got their prices. Mine are just a little more. I know some people take the cost of their ingredients and then times it by 3 or 4. Hope this helps a little.
I don't have any recipes to share but just wanted to say good luck!
You should call around to area stores, chains and bakeries and ask generic questions like how much for this size sheet cake, specialty cakes and then decide on your number from there... even if you are over their price, it is fine because you have freshly made products, not frozen. As for whipped icing... I don't know, I use buttercream. I have several football themed pans, which I know won't help you if you don't have them. Michael's has a football pan that is pretty simple to do, so you wouldn't have to worry too much about it.. I am sure you will do fine.... good luck!
I had a request for whipped icing and I had never made it either. I used Wiltons mix (Michaels), you just mix it with ice cold water...it actually tastes pretty good! It's not cost friendly though, $4.00/box but it works in a pinch. I used it on the Pink Roses cake in my pics. It worked great for decorating.
Sweetcakes- did you use it for all of your decos? I have a friend that used to work at a bkery and she makes whipped all the time. I used some of hers to cover my 2nd cake for course 1 (last week!!!!!!) and I know it was way to soft to be able to pipe. Is the wilton kind of the consistency of bc?
STABILIZED WHIPPED CREAM ICING
1 tsp. unflavored gelatin
4 tsp. cold water
1 c. heavy whipping cream (at least 24 hours old and very cold)
1/4 c. confectioners' sugar
1/2 tsp. clear vanilla extract
Combine gelatin and cold water in small saucepan. Let stand until thick. Place over low heat, stirring constantly just until gelatin dissolves. Remove from heat and cool slightly. Whip cream, sugar and vanilla until slightly thickened. While beating slowly, gradually add gelatin to whipped cream mixture. Whip at high speed until stiff.
Yield: 2 cups
Cakes iced with whipped cream must be kept refrigerated. (This is the commercial recipe used by bakeries).
