Putting Fondant On Ganached Cake

So I've got a wedding cake coming up and I covered them in ganache ratio 2:1 milk/dark chocolate and cream. They've been in the fridge overnight and I took it out slightly wet it with water and put fondant straight on and was smoothing it out. It was fine at first and then it got really sticky and I didnt even smooth it all!

What can I do to fix this? I've got it in front of a fan right now. How can i prevent this from happening to the other cakes?

don't wet them down -- they will probably get a little sheen of moisture from the change in temperature anyhow -- in fact take one out and see how much condensation forms -- you can also stick it back in the fridge too but just to check so you'll know what to expect
